I have a fool-proof Ghirardelli brownie recipe that my husband loves but have been wanting to switch up for awhile. I found this fun recipe for brownie cookies  on Joy the Baker and gave it a shot.

The brownies are definitely more airy than my usual dense brownies but luckily not too cakey. I suggest leaving the batter in the fridge for at least 2-3 hours as it gets really difficult to manage at room temperature.
